A guilt-free dessert!
A healthy dessert to eat without remorse and without moderation. It is without added sugar, gluten, eggs … with great taste, good fats and fibers. Even if it’s Christmas, there is no need to abuse and feel bad (or guilty) the next day. But, you don’t have to say it’s a healthy dessert either! Keeping a secret is allowed 😉
Prepared in advance, no stress!
Indeed, as these tarts are stored in the freezer, they can be made in advance. It avoids stress. You just have to think about taking them out a bit before eating them. That’s all! Too cool, right? Me, I love things prepared in advance!
Decorated like a Queen
To make your tarts look like a queen, it goes without saying to decorate them. Decorate as you want and / or with what you have! To give you ideas, you can put caramelized crushed nuts, melted chocolate, fruits, powdered coconut for a snow effect … even all of these at the same time, it’s allowed as long as it’s a nice presentation!
Extremely simple
Easy to do … yes, if you have a blender or a food processor. If you don’t have any, buy the ground versions of the nuts that are also called flour but don’t especially use nut butter. And for dates, in exotic grocery stores (Moroccan ones for example) there is date paste. Thus, you will have to knead by hand but at least it is quite achievable!
Flavored cream or not
The cream can be flavored with whatever you like … maple flavor, pumpkin pie, speculos, chai, cinnamon, cardamom, vanilla, rose, orange blossom, etc. Ideally, add the aroma in the form of ground spices or liquid concentrate so as not to alter its consistency.
Whether in individual portions or a single large pie, this recipe will appeal to young and old.
Chocolate and Cream Tarts, vegan and gluten-free
For 6 tarts, you need …
Chocolate crust
- 150g Almonds
- 90g Dates
- 10g Cocoa (or carob) powder
- 7ml Vanilla
Cream filling
- 150g Cashews soaked overnight
- 90g Dates
- Mix of spices to taste (speculos, chai, cinnamon, cardamom, etc.)
- 7ml Vanilla
- Water

- Grease the tartlet molds with coconut oil.
- Grind and blend all the ingredients for the crust in a food processor. Return to the molds and then flatten / pack well at the bottom of the molds. Reserve.
- Grind and mix all the ingredients for the cream in a blender or food processor. Add the water in small amounts to obtain a thick, smooth and creamy consistency without being too runny. Pour on the tart shells, leaving space for the decorative elements.
- Optionally, add decorative elements immediately or when ready to serve.
- Keeps in the freezer. Take out 20 minutes before eating.

Un dessert guilt-free!
Un dessert santé à manger sans remord et sans modération. Il est sans sucre ajouté, sans gluten, sans œufs… avec beaucoup de goût, de bons gras et des fibres. Même si c’est Noël, il n’est pas nécessaire de faire d’abus et de se sentir mal (ni coupable) le lendemain. Mais, ce n’est pas nécessaire non plus de dire que c’est un dessert bon pour la santé! Garder le secret est permis 😉
Préparées d’avance, pas de stress!
En effet, comme ces tartelettes se conservent au congélateur elles peuvent être faites d’avance. Cela évite le stress. Il faut simplement penser les sortir un peu avant de les manger. C’est tout! Trop cool, non? Moi, j’adore les trucs préparés d’avance!
Décorées comme une reine
Pour que tes tartelettes prennent une allure de reine, il va de soi de les décorer. Décorer comme tu veux et/ou avec ce que tu as! Pour te donner des idées, tu peux mettre des noix concassées caramélisées, du chocolat fondu, des fruits, de la noix de coco pulvérisée pour un effet de neige… même tout ça à la fois, c’est permis tant que ça fasse une jolie présentation !
Simplissime simplicité
Simple à faire… oui, si tu as un blender ou un robot hachoir. Si tu en n’as pas, achètes les versions moulues des noix que l’on appelle aussi farine mais surtout pas en purée/beurre. Et pour les dattes, dans les épiceries exotiques (marocaines par exemple) on trouve de la pâte de dattes. Ainsi, tu devras malaxer à la main mais au moins c’est tout à fait réalisable!
Crème aromatisée ou pas
La crème peut être aromatisée à ce qui te plaît… goût érable, tarte à la citrouille, spéculos, chai, cannelle, cardamome, vanille, rose, fleur d’oranger, etc. Idéalement, ajouter l’arôme sous forme d’épices moulues ou de concentré liquide afin de ne pas altérer sa consistance.
Que ce soit en portions individuelles ou une seule et grande tarte, cette recette saura plaire aux petits et grands.
Tartelettes Choco-Crème, végétaliennes et sans gluten
Pour 6 tartelettes, tu as besoin de…
Croute au chocolat
- 150g Amandes
- 90g Dattes
- 10g Poudre de cacao (ou de caroube)
- 7ml Vanille
Remplissage à la crème
- 150g Cajous trempés une nuit
- 90g Dattes
- Mix d’épices au goût (spéculos, chai, cannelle, cardamome, etc.)
- 7ml Vanille
- Eau

- Graissez à l’huile de coco les moules à tartelettes.
- Broyez et mixez tous les ingrédients de la croûte dans un robot mélangeur. Repartir dans les moules et puis bien aplatir / tasser au fond des moules. Réserver.
- Broyez et mélangez tous les ingrédients de la crème dans le robot mélangeur. Ajouter l’eau par petite quantité afin d’obtenir une consistance épaisse, lisse et onctueuse sans qu’elle soit trop liquide. Versez sur les fond de tartelettes en laissant de l’espace pour les éléments décoratifs.
- Au choix, ajouter les éléments décoratifs immédiatement ou au moment de servir.
- Se conserve au congélateur. Sortir 20 min avant de manger.

Spiced Beans Fresh Salad / Salade fraîche aux haricots épicés

Place the onion strips, garlic cloves, tomato wedges and rosemary sprigs on a baking sheet. Oil generously, add the umami mix or season with salt and pepper. Mix to coat all ingredients with oil. Bake 30 min.

Laver et essorer les feuilles. Séparer le tronçon blanc des feuilles du Bok Choy. Garder que les feuilles. Les hacher finement. Faire pareil avec les fanes de radis, le persil et la menthe. Mettre toutes ces feuilles dans un grand bol à mélanger.
Couper les feuilles filo en 3 sur la longueur. Conserver 6 feuilles et laisser les autres dans un torchon humide pour ne pas qu’elles sèchent et se déchirent. Tu travailles 3 ou 6 rouleaux à la fois selon ton choix de grosseur.
