Winter vegetable rhymes with root vegetables and often, forgotten vegetables. According to Wikipedia, parsnip is, along with rutabaga and Jerusalem artichoke (Sunchokes), one of the rare “forgotten” vegetables on the fresh shelves of markets and supermarkets, almost all year round but especially in winter.
Parsnip; Sweet and Spicy
The parsnip is an ivory-colored vegetable with a shape resembling the carrot but much richer in vitamins and minerals than it. It is particularly rich in potassium and is a good source of dietary fiber. Its taste is slightly sweet with a spicy aroma. This spicy aroma comes from a compound called 3-sec-butyl-e-methoxypyrazine which is found at higher levels in parsnips than in any other vegetable. Because of this compound, there is a very special affinity of parsnips for peas.
A Winter Soup
Parsnip and pea soup is a match made in heaven and that’s why your taste buds celebrate when you drink it!
This simple recipe results in a delicious winter soup. Thanks to the parsnip which acts as a thickener, this soup is incredibly soft and creamy and above all gives this slightly spicy flavor in the background.
Even those who don’t like these vegetables – like my children! – will be amazed by this soup!

Parsnip and Pea Soup
For 1.5L, you need…
- 4-5 parsnips, peeled and cut into rounds
- 400g frozen peas
- 1 onion, peeled and cut into strips
- 1 L vegetable broth
- salt, pepper

- In a saucepan, sweat the onion until translucent.
- Add the parsnip slices and cook for a few minutes.
- Add the broth and peas and bring to the boil then reduce the heat to continue cooking for around 30 minutes.
- Put in an immersion blender (hand blender) or wait for it to cool before adding it to a blender. Blend until smooth and creamy. Correct the seasoning.
- Serve hot. Store for 5 days in an airtight container in the refrigerator.

Légume d’hiver rime avec légumes racines et souvent, légumes oubliés. Selon Wikipedia, le panais est, avec le rutabaga et le topinambour, l’un des rares légumes « oubliés » sur les étalages du frais des marchés et supermarchés et ce, presque à longueur d’année mais surtout en hiver.
Le panais ; sucré et épicé
Le panais est un légume de couleur ivoire et de forme ressemblant à la carotte mais bien plus riche en vitamines et minéraux qu’elle. Il est particulièrement riche en potassium et est une bonne source de fibres alimentaires. Son goût est légèrement sucré avec un arôme épicé. Cet arôme épicé vient d’un composé nommé 3-sec-butyl-e-méthoxypyrazine qui se retrouve à des niveaux plus élevés dans le panais que dans tout autre légume. À cause de ce composé, il y a une affinité très particulière du panais pour les petits pois.
Une soupe hivernale
La soupe de panais et de petits pois est un mariage parfait et c’est pourquoi tes papilles gustatives font la fête en la buvant!
Cette recette toute simple résulte ainsi en une délicieuse soupe hivernale. Grâce au panais qui agit comme un épaississant, cette soupe est d’une douceur et d’une onctuosité incroyable et surtout qui donne cette saveur légèrement épicée en arrière plan.
Même ceux qui n’aiment pas ces légumes -comme mes enfants!- seront bluffés par cette soupe!

Soupe Panais et Pois
Pour 1.5L, tu as besoin de…
- 4-5 panais, pelé et coupé en rondelles
- 400g petits pois surgelés
- 1 oignon, pelé et coupé en lanières
- 1 L bouillon de légumes
- sel, poivre

- Dans une casserole, faire suer l’oignon jusqu’à ce qu’il soit translucide.
- Ajoutez les rondelles de panais et faites revenir quelques minutes.
- Ajoutez le bouillon et les petits pois et portez à ébullition puis réduisez le feu afin de poursuivre la cuisson environ 30 min.
- Passez au mélangeur à immersion (mixeur plongeant) ou attendez son refroidissement avant de l’ajouter dans la cuve d’un mélangeur. Mélangez jusqu’à consistance lisse et onctueuse. Rectifiez l’assaisonnement.
- Servir chaud. Se conserve 5 jours dans un contenant hermétique au réfrigérateur.
