The power of forgotten vegetables: Fennel and Kohlrabi

For this recipe, I wanted to combine two vegetables that deserve to be better known and cooked more often.

  • Fennel adds a subtle aniseed note and an incredible feeling of freshness in the mouth. It’s an excellent aid to digestion, rich in antioxidants and very hydrating.
  • Kohlrabi, with its slightly sweet flavor, gives soup an incredibly velvety texture without the need for potatoes or other starches. It’s packed with vitamin C and fiber, perfect for supporting our vitality.

Zero Waste Tip: Don’t throw away your leek greens anymore!

If you read my articles regularly, you know how much I hate throwing away food. Often, when cooking leeks, we only keep the white part and leave the green leaves in the compost. What a mistake!

Leek greens are extremely rich in fiber and pack an intense flavor. Personally, I wash them thoroughly, slice them into rounds, and freeze them. In this soup, they enrich the vegetable broth with their essential nutrients and give the dish a beautiful, vibrant green color. A great way to cook with 100% of our ingredients!

Hot, warm, or iced: Soup for all seasons

The magic of this recipe lies in its versatility. In winter, serve this soup piping hot for a cozy and comforting effect after a long, active day.

But don’t put it away in the cupboard when warmer weather arrives! During a heatwave, this soup transforms into a fantastic white and green gazpacho. Chilled for a few hours in the refrigerator and served ice cold, it becomes incredibly refreshing, perfect for hydrating without weighing down digestion. In the transitional seasons, a warm serving is just as delicious.

Fennel and Kohlrabi Soup with Za’atar and Leek Greens

⏱️ Preparation: 15 min | 🔥 Cooking: 35 min | 🥣 Portions : 1,5 L

For 4 to 6 people, you will need…

  • 1 yellow onion, thinly sliced
  • 1 large fennel bulb (or 2 small ones), diced
  • 1 kohlrabi, peeled and cut into pieces
  • 150g to 200g of leek greens (fresh or frozen), washed and sliced
  • 1 clove of garlic, crushed
  • 2 small bay leaves
  • 1 tsp of coriander seeds or za’atar (optional, for extra flavor)
  • 1 L homemade (or store-bought) vegetable broth
  • Salt, freshly ground black pepper
  • A drizzle of olive oil or plant-based cream for serving

  1. In a large saucepan, sauté the onion and garlic in a little olive oil until translucent.
  2. Add the diced fennel, kohlrabi, and leek greens along with the bay leaves. Season lightly with salt and pepper. Let the vegetables sweat for 5 to 7 minutes to concentrate their flavors.
  3. If you like mild spices, add your little touch of coriander or za’atar at this stage and stir well.
  4. Pour in the vegetable stock, bring to a boil, then reduce the heat. Simmer, covered, for about 30 to 35 minutes, until the kohlrabi is very tender when pierced with the tip of a knife.
  5. Be sure to remove the bay leaves.
  6. Blend the soup with an immersion blender (or pour it in small batches into a high-powered blender) until it is perfectly smooth, silky, and homogeneous. Taste and adjust the seasoning.
  7. For a winter version: Serve immediately while piping hot with a drizzle of plant-based cream and a few reserved fennel leaves for decoration.
  8. For a heatwave version: Let it cool to room temperature, then transfer to an airtight container in the refrigerator for at least 3 to 4 hours before enjoying chilled with a drizzle of extra virgin olive oil.

It can be easily stored for 1 week in the refrigerator or freezes very well for quick lunches.

Pour cette préparation, j’ai voulu marier deux légumes qui gagnent à être connus et cuisinés plus souvent.

  • Le fenouil apporte cette petite note anisée subtile et une incroyable sensation de fraîcheur en bouche. C’est un excellent allié pour la digestion, riche en antioxydants et très hydratant.
  • Le chou-rave, avec sa douceur légèrement sucrée, donne une texture incroyablement veloutée au potage sans avoir besoin d’ajouter de pomme de terre ou de féculent. Il est gorgé de vitamine C et de fibres, parfait pour soutenir notre vitalité.

L’astuce Zéro Déchet : Ne jette plus tes verts de poireau !

Si tu lis régulièrement mes articles, tu sais à quel point j’ai horreur de jeter de la nourriture. Souvent, lorsqu’on cuisine les poireaux, on ne garde que le blanc et on abandonne les feuilles vertes au compost. Quelle erreur !

Les verts de poireau sont extrêmement riches en fibres et cachent des saveurs intenses. Personnellement, je les lave soigneusement, je les coupe en rondelles et je les stocke au congélateur. Pour ce potage, ils viennent enrichir le bouillon de légumes de leurs nutriments essentiels et apportent une magnifique couleur verte vibrante au plat. Une belle façon de cuisiner 100 % de nos ingrédients !

Chaud, tiède ou glacé : Le potage toutes saisons

La magie de cette recette réside dans sa polyvalence. En hiver, sert ce potage bien chaud pour un effet “cocooning” et réconfortant après une longue journée active.

Mais ne le range pas au placard quand les beaux jours arrivent ! Par temps de canicule, ce potage se transforme en un fantastique gaspacho blanc-vert. Glissé quelques heures au réfrigérateur et servi bien froid, il devient d’une fraîcheur absolue, parfait pour hydrater l’organisme sans alourdir la digestion. À l’entre-saison, une dégustation tiède est tout aussi délicieuse.

Potage de Fenouil et Chou-Rave au Za’atar et Verts de Poireau

⏱️ Préparation : 15 min | 🔥 Cuisson : 35 min | 🥣 Portions : 1,5 L

Pour 4 à 6 personnes, tu as besoin de…

  • 1 oignon jaune, émincé
  • 1 gros bulbe de fenouil (ou 2 petits), coupé en dés
  • 1 chou-rave, pelé et coupé en morceaux
  • 150g à 200g de verts de poireau (frais ou sortis du congélateur), lavés et émincés
  • 1 gousse d’ail, écrasée
  • 2 petites feuilles de laurier
  • 1 cc de graines de coriandre ou de za’atar (optionnel, pour relever)
  • 1 L de bouillon de légumes maison (ou du commerce)
  • Sel, poivre noir du moulin
  • Un filet d’huile d’olive ou de crème végétale pour le service

  1. Dans une grande casserole, faites revenir l’oignon et l’ail dans un peu d’huile d’olive jusqu’à ce qu’ils soient translucides.
  2. Ajoutez les dés de fenouil, de chou-rave et les verts de poireau avec les feuilles de laurier. Saler et poivrer légèrement. Laissez suer les légumes pendant 5 à 7 minutes pour concentrer leurs saveurs.
  3. Si vous aimez les épices douces, ajoutez votre petite touche de coriandre ou de za’atar à ce stade et remuez bien.
  4. Versez le bouillon de légumes, portez à ébullition, puis réduisez le feu. Laissez mijoter à couvert pendant environ 30 à 35 minutes, jusqu’à ce que le chou-rave soit bien tendre sous la pointe d’un couteau.
  5. Retirez impérativement les feuilles de laurier.
  6. Passez le potage au mixeur plongeur (ou versez par petites portions dans un blender puissant) jusqu’à l’obtention d’une texture parfaitement lisse, soyeuse et homogène. Goûtez et rectifiez l’assaisonnement.
  7. Pour une version hivernale : Servez immédiatement bien chaud avec un filet de crème végétale et quelques pluches de fenouil réservées pour la décoration.
  8. Pour une version canicule : Laissez tiédir à température ambiante, puis transférez dans un contenant hermétique au réfrigérateur pendant au moins 3 à 4 heures avant de déguster glacé avec un filet d’huile d’olive extra-vierge.

Se conserve facilement 1 semaine au réfrigérateur ou se congèle très bien pour les lunchs pressés.
