Spetzofai or Greek Pepper Stew with Sausage / Spetzofaï ou ragoût grec de poivrons à la saucisse

Originating from the Mount Pelion region of Greece, spetzofai (or spetsofai), is a stew of green pepper and tomato simmered to which large lightly smoked and spiced country sausages are added. Eggplant is also sometimes added. It’s a dish prepared in the summer when the peppers and tomatoes are harvested. But it can be so comforting in winter.
