My koso’s candied fruits
Apples and pears are candied because they were used to create a raw and fermented syrup called Koso. Koso in Japan or Cheong in Korea is a fermented syrup that is obtained by mixing a plant (in this case a fruit) with sugar. This allows for a long conservation while preserving their nutrients and certain microorganisms that are beneficial for health.
