Fermented foods have been popular for a long time because they are beneficial to health. When we talk about fermented foods, we mainly think of sauerkraut, which is the most popular and most common. But there are also vegetables in vinegar – pickles – and drinks like Kombucha. But do you know about fermented milk? Different from yogurt, fermented milk is cow’s, goat’s or sheep’s milk to which lactic ferments are added (different from those for yogurt) which allow acidification and gelling of the milk by transforming lactose (the sugar contained in milk) into lactic acid. It will therefore be more acidic and creamier than classic milk. It is somewhere between regular milk and yogurt.
