All good things must come to an end… Today, we’re wrapping up our wonderful Albanian culinary journey in style! After sharing my melt-in-the-mouth stuffed eggplants and last week’s legendary, comforting Tavë Kosi, it’s time for my kids’ and teens’ favorite part: dessert!
Step into any pastry shop or café in Tirana, and you’ll find Trileçe (inspired by the Latin American Tres Leches). It’s an incredibly airy sponge cake, literally soaked in a blend of three different milks and topped with a thin layer of luscious caramel. My kids fell in love with it instantly!
The problem? The traditional version is packed with ultra-sweet condensed milk and refined sugar—not exactly ideal for our cells or for maintaining steady energy levels! Challenge accepted: I’ve whipped up a gluten-free, low-glycemic, and easily digestible version that keeps that magical “cloud-like” texture. Come join me in the kitchen!
Why is my version of Trileçe good for your body?
You can treat your children while also looking after their health—it’s entirely possible with a few clever tweaks:
- A base of alternative flours and super-fibers: Forget wheat flour! Here, we use what’s already in the pantry: a smart blend of almond flour, finely ground oat bran, acacia fiber (a magical prebiotic), and a touch of psyllium. It’s gentle on the gut, filling, high in fiber, and 100% gluten-free.
- A trio of light plant-based milks: Instead of processed condensed milk, we opt for a combination of almond milk, light coconut milk (rich in healthy fats), and a touch of honey or maple syrup.
- An antioxidant-rich “faux caramel”: We skip the burnt white sugar in favor of a sauce made from pure maple syrup and whole almond butter. The taste is amazing—without the spike in blood sugar!
Vitality Trileçe Recipe
⏱ Preparation: 25 min | 🔥 Cooking time: 25 min | ❄️ Resting time: 4h (or overnight)
For 6 to 8 servings or a 23×23 cm pan, you need…
For the sponge cake (gluten-free):
- 4 big organic eggs (yolks and whites separated)
- 60g coconut blossom sugar (or stevia for a sugar-free option)
- 35g fine almond flour
- 20g arrowroot starch (or cornstarch)
- 50g oat bran (ideally quickly processed in a blender to achieve a fine, flour-like texture)
- 15g Acacia fiber
- 1 tsp. Blond psyllium (essential for adding bounce and retaining the milk bath!)
- 1 tsp. gluten-free baking powder
- 1 tsp. Pure vanilla extract
- 1 pinch of sea salt
For the famous bath made with three wholesome milks:
- 200ml unsweetened almond milk
- 150ml of light coconut milk (canned)
- 100ml of plant-based liquid cream (oat or soy)
- 2 tbsp. Maple syrup (or liquid honey)
For the low-GI caramel topping:
- 4 tbsp. Maple syrup
- 2 tbsp. white almond butter (or cashew butter) for creaminess
- 1 tsp. Melted coconut oil
- 1 a good pinch of fleur de sel (for that salted butter caramel effect!)

- The airy base: Preheat your oven to 175°C. In a mixing bowl, beat the egg yolks with the coconut sugar and vanilla until the mixture turns pale. In another bowl, mix together all the dry ingredients (oat bran, almond flour, arrowroot, acacia fiber, psyllium, and baking powder).
- The cloud effect: Mix the dry ingredients into the egg yolks (the texture will be somewhat dense—this is normal; let it rest for 2 minutes to allow the fibers to activate). Beat the egg whites with the pinch of salt until very stiff peaks form. Vigorously fold in the first third of the egg whites to loosen the batter, then gently fold in the rest using a spatula, employing a bottom-to-top motion to avoid deflating the mixture.
- The cooking: Pour the batter into a square pan that has been lined or greased with coconut oil. Bake for 22 to 25 minutes. The cake should be golden brown, and a toothpick inserted into the center should come out clean. Let it cool for 10 minutes.
- The big plunge: Now for the magic step! Using a fork or a wooden skewer, poke lots of small holes all over the cake. Mix the “three-milk” soak ingredients in a pitcher and pour the mixture evenly over the cake. It will soak it all up like a sponge! Place in the fridge for at least 4 hours.
- The glaze: Just before serving, vigorously whisk the caramel ingredients in a bowl until the mixture is smooth and thick enough to coat the back of a spoon. Gently spread it over the top of the thoroughly chilled cake.
Chantal’s Tip : This dessert is even better the next day, once the milks have fully soaked into the center of the cake. Serve it well-chilled, perhaps garnished with a few toasted almond slivers or fresh raspberries for a boost of antioxidants!
My teens gave it a 100% thumbs-up, and the best part is that it doesn’t leave any heavy feeling!

Toutes les bonnes choses ont une fin… Aujourd’hui, on clôture en beauté notre magnifique saga culinaire en Albanie ! Après t’avoir partagé mes aubergines farcies fondantes et le mythique Tavë Kosi réconfortant de la semaine dernière, il est temps de passer au moment préféré de mes enfants et ados : le dessert ! 🍰✨
Si tu entres dans n’importe quelle pâtisserie ou café à Tirana, tu y trouveras le Trileçe (inspiré du Tres Leches d’Amérique latine). C’est un gâteau éponge incroyablement aérien, littéralement noyé dans un mélange de trois laits différents, puis nappé d’une fine couche de caramel fondant. Mes enfants en ont eu un coup de foudre immédiat !
Le problème ? La version traditionnelle déborde de lait concentré ultra-sucré et de sucre raffiné. Pas idéal pour nos cellules ni pour garder une belle énergie ! Défi relevé : je t’ai concocté une version sans gluten, à index glycémique bas et merveilleusement digeste, qui garde ce côté “nuage en bouche” si magique. Suis-moi en cuisine !
Pourquoi ma version du Trileçe fait du bien à ton corps ?
Faire plaisir à ses enfants tout en chouchoutant leur santé, c’est tout à fait possible grâce à quelques ajustements malins :
- Une base de farines alternatives et de super-fibres : On oublie la farine de blé! On compose ici avec ce qu’on a dans les placards : un combo malin de poudre d’amande, de son d’avoine mixé fin, de fibre d’Acacia (un prébiotique magique) et d’un soupçon de psyllium. C’est doux pour les intestins, rassasiant, riche en fibres et 100% sans gluten.
- Un trio de laits végétaux et légers : À la place du lait concentré industriel, on mise sur une alliance de lait d’amande, de lait de coco léger (riche en bons lipides) et d’une touche de miel ou de sirop d’érable.
- Un faux “caramel” antioxydant : On zappe le sucre blanc brûlé pour une sauce au sirop d’érable pur et à la purée d’amande complète. Le goût est bluffant, l’impact sur la glycémie en moins !
La Recette du Trileçe Vitalité

Pour 6 à 8 parts ou un moule 23x23cm, tu as besoin de…
Pour le gâteau éponge (sans gluten) :
- 4 gros œufs bio (jaunes et blancs séparés)
- 60g de sucre de fleur de coco (ou stevia pour une option sans sucre)
- 35g de farine d’amande fine
- 20g de fécule d’arrow-root (ou de fécule de maïs)
- 50g de son d’avoine (idéalement passé rapidement au blender pour obtenir une texture de farine fine)
- 15g de fibre d’Acacia
- 1 c. à café rase de psyllium blond (indispensable pour donner du rebondi et retenir le bain de lait!)
- 1 c. à café de levure chimique sans gluten (poudre à lever)
- 1 c. à café d’extrait de vanille pure
- 1 pincée de sel marin
Pour le fameux bain aux “trois laits” sains :
- 200ml de lait d’amande non sucré
- 150ml de lait de coco léger (en boîte)
- 100ml de crème liquide végétale (avoine ou soja)
- 2 c. à soupe de sirop d’érable (ou de miel liquide)
Pour le nappage caramel IG bas :
- 4 c. à soupe de sirop d’érable
- 2 c. à soupe de purée d’amande blanche (ou de cajou) pour le côté crémeux
- 1 c. à café d’huile de coco fondue
- 1 belle pincée de fleur de sel (pour l’effet caramel au beurre salé !)

- La base aérienne : Préchauffe ton four à 175°C. Dans un saladier, bats les jaunes d’œufs avec le sucre de coco et la vanille jusqu’à ce que le mélange blanchisse. Dans un autre bol, mélange ensemble toutes tes poudres (son d’avoine, amande, arrowroot, acacia, psyllium et levure).
- L’effet nuage : Intègre le mélange de poudres aux jaunes d’oeufs (la texture va être un peu dense, c’est normal, laisse reposer 2 minutes pour que les fibres s’activent). Monte les blancs d’œufs en neige très ferme avec la pincée de sel. Incorpore un premier tiers des blancs énergiquement pour détendre la pâte, puis le reste très doucement à la spatule, en mouvements enveloppants du bas vers le haut pour ne pas les casser.
- La cuisson : Verse la pâte dans un moule carré préalablement chemisé ou huilé à l’huile de coco. Enfourne pour 22 à 25 minutes. Le gâteau doit être doré et un cure-dent doit en ressortir propre. Laisse tiédir 10 minutes.
- Le grand plongeon : C’est l’étape magique ! À l’aide d’une fourchette ou d’un pic en bois, perce une multitude de petits trous partout sur le gâteau. Dans un pichet, mélange les ingrédients du bain aux trois laits et verse le tout harmonieusement sur le gâteau. Il va tout absorber comme une éponge ! Place au réfrigérateur pour minimum 4 heures.
- Le nappage : Juste avant de servir, fouette vigoureusement les ingrédients du caramel dans un bol jusqu’à obtenir une texture lisse et nappante. Étale-la délicatement sur le dessus du gâteau bien frais.
L’astuce de Chantal : Ce dessert est encore meilleur le lendemain, quand les laits ont parfaitement imprégné le cœur du gâteau. Sers-le bien frais, éventuellement décoré de quelques éclats d’amandes grillées ou de framboises fraîches pour la touche d’antioxydants !
Mes ados l’ont validé à 100 %, et le plus beau, c’est qu’il ne laisse aucune sensation de lourdeur !
