The Authentic Albanian Tavë Kosi, Reimagined: The Ultimate Comfort-Food Gratin

If you’ve read my Albania travel diary and tried my melt-in-the-mouth stuffed eggplants last week, you know that trip was a huge source of inspiration for my cooking. Today, I’m (finally!) heading into the kitchen to share THE recipe my whole family has been eagerly waiting for: the legendary Tavë Kosi. 🍲

It’s the official national dish there. Originating from the city of Elbasan, this traditional meal combines tender meat, garlic, and oregano with an absolutely divine, oven-baked topping made from yogurt and eggs. When the weather turns chilly or after a long, active day, it is the ultimate comfort food. It warms the body, nourishes the muscles, and offers incredible comfort in every bite. Let me show you how to make a healthy, easily digestible, and naturally gluten-free version!

Why is Tavë Kosi a vitality booster?

Despite its appearance as an ultra-indulgent gratin, Tavë Kosi ticks all the boxes of my nutritional philosophy:

  • High-quality protein: By choosing pasture-raised lamb (or free-range chicken), you’re getting plenty of complete proteins and iron for long-lasting satiety.
  • Digestive gentleness: Cooked yogurt (Greek-style) combined with eggs creates a silky, textured custard. It is incredibly gentle on the intestinal lining and very easy to digest.
  • A naturally gluten-free alternative: Traditional recipes sometimes use a wheat-flour roux to thicken the sauce. Here, we skip the gluten without sacrificing an ounce of creaminess!

The age-old debate: With or without rice? 🌾

In Albania, most village-style versions include a handful of rice at the bottom of the dish to soak up the meat’s delicious cooking juices. At home, I prefer to cook it without rice to keep the dish lighter, easier to digest for an evening meal, and lower in glycemic index.

But no need for anyone to feel left out! Today, I’m sharing two variations with you so you can choose the one that best suits your metabolism and your guests.

Vitality Tavë Kosi Recipe

⏱ Preparation : 25 min | 🔥 Cooking time: 1 hour 30 minutes (braising) + 40 minutes (oven)

For 4 people, you need…

  • 600g pasture-raised lamb leg or shoulder, cut into cubes (or chicken thighs for a lighter version)
  • 30g churned butter (or ghee)
  • 15 ml extra-virgin olive oil
  • 3 cloves of garlic, finely sliced
  • 1 tsp dried oregano
  • Sea salt and freshly ground pepper

For the yogurt cream (the magical topping)

  • 500g plain Greek yogurt (whole milk or goat milk for better digestibility)
  • 3 large organic eggs
  • 1 tablespoon of amaranth starch (arrowroot) or cornstarch (to replace traditional wheat flour and thicken the sauce—gluten-free!)
  • A pinch of grated nutmeg

Choose your assembly variant.

  • “Chantal” Version (Without rice): We’re banking on the melt-in-the-mouth tenderness of the meat and the richness of the cream. Lighter and low-GI!
  • Traditional Version (With rice): Add 40g raw long-grain rice (pre-rinsed).

  1. Braising the meat: In a large sauté pan, heat the olive oil and half the butter. Brown the lamb cubes on all sides. Add the minced garlic, oregano, salt, and pepper. Pour in a small glass of water (about 150 ml), cover, and simmer over low heat for 1 to 1¼ hours, until the meat is very tender but still holds its shape. Reserve the cooking juices!
  2. Preparing the topping: Preheat your oven to 180°C. In a large bowl, whisk the eggs with the Greek yogurt and the starch of your choice. Add the remaining melted butter (cooled slightly), the pinch of nutmeg, and a little salt and pepper.
    • Vitality tip: gently stir 3 to 4 tablespoons of the warm lamb cooking juices into this mixture to infuse the flavors without curdling the eggs.
  3. Assembly: Place the cooked lamb pieces in a gratin dish (ideally earthenware, for that traditional Albanian touch!).
    • If you chose the version with rice: Scatter the raw rice evenly around the meat and pour the remaining meat cooking juices over it.
    • If you chose my rice-free version: Simply pour the remaining meat juices directly over the pieces.
  4. The big soak: Generously coat everything with your yogurt and egg mixture. The meat must be completely covered.
  5. Cooking: Bake for 40 to 45 minutes. The top should rise slightly and develop a magnificent, deep golden crust—almost speckled in appearance.

The Chef’s Secret 🤫: Let the dish rest out of the oven for 10 to 15 minutes before serving. This is a crucial step to ensure the yogurt flan fully sets to the perfect consistency and doesn’t collapse when sliced!

Serve this delight piping hot, accompanied by a generous plate of steamed green vegetables or a crisp salad. It is pure, comforting bliss.
